Culinary Journey: Around the globe

Our culinary experts around the globe are very familiar with developing and producing high class meals for premium classes onboard an aircraft. But we came back down to the ground to take on the challenge of creating a gala dinner for 170 including our top managers at LSG Sky Chefs.

Our motto for this dinner, which took place during a management conference in Hong Kong at the end of September, was a culinary journey around the globe. Each of the six Executive Chefs, who are responsible for one of our regions and are members of the global Culinary Excellence team, suggested two to three dishes either typical for their region or accented with local spices and flavors.

To finalize the administrative work around the menu – for example, confirming the menu, ensuring authentic ingredients (such as those used in the Amazonas region) are available and also deciding on what china to present the dishes on – my team and I met in Rothenburg ob der Tauber in Germany during our Global Culinary Leadership Program. This preparation was followed by an actual cooking session, to finalize the meal and the recipes.
