The LSG Group's Christmas Recipes: Omelette Soufflé

Need a French-inspired dessert with some exotic flavors for a cozy evening by the fireplace? The LSG Group’s culinary Santa Claus has a card up his sleeve. Our omelet soufflé with Just Spices’ “Sweet Love,” served with a warm pineapple and clementine salad, can be quickly prepared to offer a sweet temptation to you and your loved ones.

For the omelet soufflé:

  • 2 eggs
  • 1 orange or clementine
  • 50 gr sugar

For the pineapple and clementine salad:

  • ½ pineapple
  • 3 clementines
  • 70 gr sugar
  • 1 tsp “Sweet Love”*
  • sprig of fresh mint

*In case you do not have “Sweet Love,” you can recreate the mix with cane sugar, ground almonds, cinnamon, lemon zest, orange zest and marigold.

Prepare the fruit. Peel the pineapple, cut it into strips and then in cubes, peel the clementines and extract the wedges.

For the warm pineapple and clementine salad, take a pan, add water to the sugar and caramelize it at medium heat. Add the juice of one clementine and boil it until it blends.

Add the pineapple cubes and allow them to boil for a minute.

Remove the pan from the stove and add the clementines along with the spice mix. Stir very briefly.

For the omelet soufflé, separate the egg white and yolk.

Whip the sugar and egg white at a medium pace until it turns white and bright. Finish it at a quicker whipping pace until the mass forms a peak.

Add grated zest from one half of a clementine and the egg yolk. Fold everything in.

Heat a non-sticky pan with butter and oil. Spread out the butter once it gets warm, then start cooking the omelet at moderate heat.

Fold the omelet in half once it turns golden. Bake it in a pre-heated oven (200 degrees Celsius) for 10 minutes.

Sprinkle some “Sweet Love” spice mix before serving. Immediately add the warm pineapple and clementine salad. Garnish with a sprig of fresh mint.
