January #perspectives: A Culinary Trip to Estonia
To start 2019 off right, Chef Ivari Kuimet is taking you on a trip to Estonia with the kiluvõileivad, literally translated to mean sprat sandwich.
The sandwich is made with four core ingredients: a dark rye bread, hard-boiled eggs (quail, in this case), green onions to top and, as the name suggests, cleaned sprat filets.
While the Baltic sprat is a common snack in Russia and the Baltic states, these core ingredients come together to form a delectable Estonian snack that is often found at official gatherings.
