It is great thing that more and more attention each year is putting in this kind of cuisine,and as common user (when flying) I can say that food at plains are not any more something you eat,instead is starting to become eating experience with more and more great taste and look.There is still a lot of work to be done depends of airline companies but in general we can looking forward to the future.
